Study Examines Roasted Pistachios as Coffee Substitute

A study recently published by researchers at the University of York (UK) concluded that pistachios, when properly roasted, can be an appetizing and decaffeinated substitute for coffee beans.

roasted pistachios as coffee substituteThe popular nut’s viability as a substitute for coffee is mostly related to its ability to produce coffee-like aromas when roasted, researchers said.

“Roasting time and roasting temperature really affect the production of many volatile compounds,” said Mustafa Özel, a University of York chemist. “As some particular compounds are mainly responsible for the characteristic aroma of the roasted product, you can manipulate which ones appear by altering the roasting time and temperature.”
