Now Brewing In Seattle: MmmHmm Coffee in Hilliard’s Brewery, Ballard

Seattle’s MmmHmm Coffee, which has been operating boozy coffee cocktail popups throughout Seattle’s Ballard neighborhood, has set up permanent shop inside Hilliard’s Beer Brewery & Taproom at 1550 NW 49th St. 

The shop officially opened Tuesday, serving single-origin coffees from Counter Culture with a variety of manual brewing devices as well as filter drip, plus a range of espresso drinks. The shop also serves homemade chai, Rishi teas, as well as fresh biscuits with “fixin’s” from Seattle’s Morsel.

Co-owner Jon French, who launched MmmHmm with business partner Jack Ellis, was trained at Counter Culture’s Atlanta training center, and he credits the tutelage of CC’s David Lamont with helping inspire MmmHmm’s coffee focus.

French and Ellis had previously been serving craft coffee cocktails during nighttime popups inside Anchored Ship Coffee Bar, where French was a manager, as well as operating a popup at the Sanborn building on Ballard Ave.
