On succeeding in the coffee business: “There’s no roadmap”
On purchasing a 1950s Probat Roaster: “It was a black market kind of thing,” Wells said. “It was the shadiest business transaction ever.”
On roasting: “There’s really no secret to roasting coffee — you’re making green coffee brown.”
