Matchstick Coffee, co-owned and run by Aaron Braun, Annie Viehweger and Spencer Viehweger, opened in January, offering pour-over filter coffees and espressos. But the company only recently delved into roasting, offering five running varieties of single-origin coffees. Here the group shares its approach:
