After two years of hawking high-quality beans and beverages with mobile setups around Spokane, Washington, Brew Peddler recently squeezed its brakes and opened its first brick and mortar cafe.
The cafe’s walls, clad in angled wooden slats, echo the front of Brew Peddler’s mobile cart. Its puzzle-piece-like intersecting angles also create an illusion of depth, which was important to married co-owners Elizabeth and Andrew Tye as they sought to maximize the 600-square-foot space.
The warmth of all that wood contrasts with more neutral tones and with pops of black from the ceilings, signage and furniture.
“We wanted the space to be unlike people’s immediate surroundings or even perceptions of what typical coffee shops are like,” Andrew Tye told Daily Coffee News. “Using the design to grab their attention, we want them to enter into the experience of what we are trying to share — the beauty of food at its finest, including coffee.”
Goods from an offsite bakery owned by Brew Peddler are delivered each morning to the shop.
“We really focus on seasonality, local sourcing, and executing a simple program with excellence,” Andrew Tye said of the bakery program. “This allows us to work with many local farmers who we’ve met through our involvement at the farmer’s markets.”
The married Brew Peddler founders each bring professional fine dining and food experience to the coffee and bakery programs. Andrew Tye graduated from the Culinary Institute of America and has worked at numerous fine-dining establishments, including Altura in Seattle and Trokay in Truckee, California.
Andrew roasts all the coffee for Brew Peddler on an updated 20-year-old Diedrich IR-12 roaster owned by Swell Coffee, where he is also employed as a roaster, in Spokane Valley.
Elizabeth Tye worked at craft chocolate companies and high-end bakeries prior to a stint at San Francisco-based Ritual Coffee Roasters, where she forged her barista chops. “Their standards are rarely matched, in our opinion,” Andrew said of Ritual.
From there, Elizabeth pivoted into accounting, an occupation she continues for Brew Peddler and other businesses when she’s not testing recipes or refining processes around the bakery.
Andrew Tye said Brew Peddler plans to maintain its presence at the Spokane Farmers Market, staying true to its mobile roots while keeping in touch with producers of fresh, local ingredients. Beyond that, the mobile operation will be scaled back to focus on the new shop and other opportunities for community outreach.
“Our involvement with the community is very high on our list for this next season,” said Tye. “We’re hoping to be present at more public events and participate in school functions. We’ll also be taking more time to develop a routine for our ever-changing seasonal syrups and food offerings, and hopefully add some more to our menu.”
