Aveley Farms Coffee Roasters is heading into a bountiful winter with the opening of its new roastery and coffee bar, part of an all-day coffee, beer and pizza collaboration just outside Baltimore in Timonium, Maryland.
Diamondback Brewing Company is the partner running the brewery, taproom and pizza kitchen, while Aveley Farms’ on-site coffee bar represents the company’s second brick-and-mortar establishment.
“Our main goal was to create one cohesive concept between Aveley and Diamondback,” Aveley Farms founder Corey Voelkel told Daily Coffee News. “We wanted to create a warm and welcoming environment that blends modern and industrial aesthetics.”
Approximately 1,800 square feet of the 4,800-square-foot total is split by the two companies for their respective production, while the rest is shared public space. The coffee bar stands apart from a wraparound, 10-tap beer bar. The seating areas borrow concepts from both the cafe and beer hall worlds, with benches, two-tops and lounge areas, as well as larger high-tops and booths.
Garage bay doors open to a 700-square-foot patio for additional seating while letting in plenty of sunlight under the 25-foot industrial ceilings.
Behind the Aveley bar, baristas craft a full slate of espresso and drip coffees, as well as seasonal and cold brew drinks. Diamondback, whose on-site 3.5-barrel brew system turns out lagers and experimental brews available only in Baltimore County, is collaborating with Aveley on a run of limited-release coffee-beers called the Origin Series.
The first Origin Series release is a Brazil Roast Coffee Stout, a malty 8.0% ABV beer that showcases the earthy, chocolatey and nutty character of a Brazilian coffee roasted by Aveley Farms’ Yil Gonzalez.
Each Origin Series release will focus on a different single-origin coffee and its distinct characteristics. All of Aveley’s green coffee and roasting operations occur in the back of the new location, where Gonzalez handles Ethiopian coffees sourced through fellow Baltimore-based outfit Keffa Coffee, Colombian coffees from woman-owned Paisa Coffee and Costa Rican beans from Selva Coffee, among others.
“We’ve built relationships with a lot of the farmers and importers over the past five-plus years of our operations and prioritize continuing those relationships,” said Voelkel. “We prioritize single-origin lots from our producers, but have started to purchase community lots as we’ve grown our wholesale.”
Voelkel has been friends with the Diamondback ownership team of Tom Foster, Colin Marshall and Francis Smith since high school. About 10 years ago, while working in mid-level management positions at startups in San Diego, a cup of coffee Voelkel at a Bird Rock Coffee Roasters location sent him in a new direction.
“It changed my view on coffee. From there I bought a home roaster and started roasting for myself on weekends, and eventually launched a website to sell, and grew it from there,” said Voelkel, who launched Aveley Farms in 2019 in the Harbor East development in Baltimore. “I drove cross country and bought an IR-12 from Dan Bailey at Amavida Coffee, and the rest is history.”
Operations moved into Aveley Farms’ Towson roastery cafe in 2022. That location, now with more space, will remain the flagship Aveley cafe and office.
“Timonium is a large suburb in Baltimore County, about 20 minutes north of Baltimore city. There are not many independent coffee or beer options in Baltimore County, and this new concept helps fill that void for all the residents,” said Voelkel, who envisions more Aveley locations opening closer to the urban center. “We would love to get back to our roots in Baltimore city and to the community that supported us and helped Aveley become what it is.”
