ColdPerk Launches the Commissary 70 for Large Batches of Concentrate

Coffee equipment company ColdPerk has launched the Commissary 70, a scaled-up machine for producing coffee concentrates that debuted at the recent World of Coffee San Diego trade show. (Read all of DCN’s WOC San Diego coverage.)

Following last year’s rollout of the company’s Café 2 brewer — an electronics-free countertop percolation system for coffee shops to batch-brew an espresso-strength concentrate the company calls ColdSpro — the Commissary 70 arrives as a higher-volume system for roasteries and beverage production facilities.

“This is designed for roasters moving into their cold brew program, or if they want to sell a concentrate that folks use for all their beverages,” ColdPerk President and CEO John Green told Daily Coffee News. “Or it’s for commissary model cafes, where they are making their concentrates and their beverages at a central kitchen each day and delivering it out to their chain locally.”

Both ColdPerk systems are capable of brewing roughly 1 liter of 12-Brix-strength concentrate per pound of coffee. Whereas the Café 2’s capacity of 2 pounds of pre-moistened grounds results in approximately 50 ounces of ColdSpro in as little as 10 minutes, depending on a user’s recipe, the Commissary 70 holds up to 70 pounds of wet grounds for batches ranging from 70 to 105 liters (18.5 to 28 gallons) of ColdSpro.

The new, larger ColdPerk brewer is made almost entirely of stainless steel. Its brew vessel tilts a full 360 degrees and contains an internal rinser for cleaning, while the spacious frame is designed to accommodate carts and various receptacles. The entire system slides on locking industrial casters.

A complete cycle of pre-wetting, loading, brewing, cleaning and resetting the Commissary 70 takes less than 2 hours, according to ColdPerk. Accessories for pre-wetting and loading are sold separately. The Commissary 70’s only electronic component meters water delivery from a plumbed source.

“We have a flow control system that regulates the water input into the system, just to make it easy to set it and forget it, if you will,” Green said. “Once you load it up, you can set it and just let it run the extraction.”

While numerous companies offer private-label and white-label concentrate production services, the Commissary 70 joins a relatively slim field of specialized commercial cold brew and concentrate production equipment targeting roastery and cafe operators.

The Commissary 70 is priced at $25,000 and is available for sale now. Green said a smaller ColdPerk model for home use is in development, as is a potentially larger unit for cafes.

“We have a robust roadmap of products that we’re looking at,” said Green. “There’s a lot of opportunity out here with this technology, a lot of places we can go with this.”
