Bryan Runyan, a Tyler, Texas-based designer and owner of Pure Coffee USA who launched the Tower home cold brew drip system last year, has introduced a commercial version, the Empire.
The all-glass system stands 45 inches tall with a 14-inch diameter footprint, and Runyan says the 300 ml-capacity unit can supply approximately 75 cups per day in commercial applications, with a consistent drip mechanism that allows for unmonitored overnight brewing. The empire also has a column system that allows for brewing of three coffees simultaneously, and the handblown glass elements are supported by a water-jet-cut and powder-coated frame in a semi gloss black.
