Quamar Keeps Things Cool Inside New Alpha Grinder Line

Italian commercial coffee grinder company Quamar is launching a new line of grinders for busy cafes called Alpha that includes a variety of technological and design departures from previous Quamar machines. 

With prominent 4.3-inch customizable touchscreen displays and modernized aesthetics, Quamar Alpha grinders feature an innovative optional cooling and temperature stabilization system.

Models within the line are currently for sale in Europe, and coming soon to the United States, according to the company.

Key to the new cooling system is a water dissipator and copper tubes that are integrated into the grinding chamber. These work in conjunction with the grinder’s fan to maintain a consistent and cool grinding temperature.

“Excessive temperature can alter the molecular structure of the ground coffee, compromising its taste, aroma, and complexity,” Quamar Co-Owner and Technical Department Manager Luca Quagliotto told Daily Coffee News. “Copper, an excellent heat conductor, quickly absorbs the heat generated in the grinding unit. The liquid circulates through a conduction tube in direct contact with the grinding chamber, dissipating heat and further lowering the temperature.”

The Alpha line also features Quamar’s first example of automatic detection of single or double portafilters. After identifying the portafilter size, the grinders automatically self-adjust the dosage, displaying the grind setting — as microns of burr gap — on the screen to users.

Three different anti-static flaps ship with each grinder. There’s a standard flap, one for lighter/harder beans, and one for one darker/less dense beans — each accommodating different static electricity behaviors exhibited by different coffees. The flap inside the machine is accessible and replaceable without tools.

The Alpha-63 and Alpha-75 models share a new high-torque motor that is optimized for 75-millimeter burrs and is oversized for 65-millimeter burrs, according to the company. The Alpha-83 has its own optimized and more powerful motor.

The screw heads visible on the Alpha’s user-facing panel reinforce the industrial style while easing access to the machine’s internal parts.

In the Quamar commercial equipment lineup, the Alpha’s release follows the high-tech, variable-speed Sirio-Q grinder, which launched in 2022. The Quamar Newton-Q auto-tamper, revealed by the Northern Italian company in 2023, launched for sale in overseas markets last year and has been seen lately alongside Quamar’s new wave of grinders at trade shows internationally.

Quagliotto said there are no plans for a 110-volt version of the Newton-Q at this time, and Quamar does not anticipate expanding its release to the U.S. market.

The new Alpha grinders are set to replace Quamar’s On-Demand T48 and Q13 models. The Quamar M80 Touch Plus, M80S and M80D are also all slated for discontinuation as the Alphas enter the market. Pricing information on Alpha and other machines is determined by individual resellers, according to the company.
