Charlie Eisenstat, a towering figure in the fertile Cleveland specialty coffee scene, is the architect of a new roasting company called Peristyle Coffee.
After launching initially with wholesale accounts, the roasting company is now expanding with direct-to-consumer sales and subscriptions, offering a rotating selection of high-quality specialty coffees.
Coffees originating from South America are first on the inaugural offer sheet, available in 12-ounce bags with a black-and-white art deco design that references the company’s namesake columnade structure while conveying a sense of prosperity and precision.
“Peristyle is the culmination of my 13 years in specialty coffee, my roast style being heavily influenced by roasters I love — Five Elephant, Koppi and Tim Wendelboe,” Eisenstat recently told Daily Coffee News. “We roast lighter and brighter than our local competitors, but still develop coffees enough to achieve an approachable balance and sweetness.”
Eisenstat, who was previously the head roaster and director of coffee for Cleveland-based Edda Coffee Roasters, also previously ran an all-Nordic-focused multiroaster online store called Pour Cleveland. With Peristyle, he continues to seek a balance of acidity, florality and sweetness through a lighter touch, using the Diedrich IR-12 owned by Goodkind Coffee in Lakewood, Ohio.
“We’re currently renting time while we find our own roasting space, hopefully in the near future,” Eisenstat told DCN. “We have a new Diedrich DR-12 ready to roll.”
Green coffees currently reach Peristyle by way of importer Genuine Origin, which Eisenstat favors for conveniently sized smaller packages of greens.
“We’re able to source high quality, current crop coffees and keep our menu constantly rotating through whatever is in season and exciting to us,” said Eisenstat.
Eisenstat is joined in the Peristyle venture by co-founder Will Hollingsworth, who helped develop the vision and branding beginning in 2023. Subscribers to the roasting company are offered two exclusive coffees each month that are not otherwise available for purchase.
With the new roaster waiting in the wings, plans call for Peristyle to ramp up both wholesale and retail — a little in Column A, and a little in Column B, so to speak.
“[We will] continue adding more quality wholesale customers who value quality coffee and service as we do,” said Eisenstat. “We are having a lot of fun with our subscription program and hope to add more subscribers in the coming months.”
