Simpatico Coffee has been named as the first tenant of the much-anticipated downtown market in Grand Rapids, Mich. The massive fresh- and specialty-food market concept, opening this summer, is based on large markets in cities such as New York, Seattle and Barcelona.
Simpatico has been roasting in nearby Holland, Mich., for 18 months, after founder Alex Fink took a family trip to Mexico and began discovering the joys of high-altitude, shade-grown coffees grown from Oaxaca. Fink still sources 100 percent of his coffees from farmers in the region. Here, Fink discusses how the Dowtown Market involvement is likely to help his business:
