Simpatico Coffee has been named as the first tenant of the much-anticipated downtown market in Grand Rapids, Mich. The massive fresh- and specialty-food market concept, opening this summer, is based on large markets in cities such as New York, Seattle and Barcelona.
Simpatico has been roasting in nearby Holland, Mich., for 18 months, after founder Alex Fink took a family trip to Mexico and began discovering the joys of high-altitude, shade-grown coffees grown from Oaxaca.
