Local Coffee, which in three years has helped lead specialty coffee growth in San Antonio through its Alamo Heights and Stone Oak bars, is planning to open a third bar in the downtown Pearl Brewery development.

Local Coffee will become the latest in a series of craft-focused food-and-drink tenants in the development project, at the original Pearl Brewery on a 26-acre site. Lake | Flato Architects led the design of the mixed-use project, maximizing the reuse of existing elements.

Local Coffee owner Robby Grubbs recently told the San Antonio Business Journal that the new shop will follow his other shops’ lead by offering coffees from guest roasters from throughout the country, including Madcap (Grand Rapids, Mich.), Counter Culture (Durham, N.C.) and Verve (Santa Cruz, Calif.). The shop will also feature rotating selections from Texas roasters such as Dallas’ Tweed and Austin’s Cuvee and Flat Track. He tells the Business Journal:

We chose Pearl for the opportunity to have people walk in just because it said coffee on our sign. We then have an opportunity to turn those folks’ ‘coffee light’ on, especially since most people have no idea what they’re missing.
