In this week’s episode of Unpacking Coffee, Kandace and Ray check in with the inimitable Jared Truby and Chris Baca of Cat & Cloud Coffee, which opened a flagship roastery café in Santa Cruz, Calif., last year.
Despite their endless convivial tomfoolery — a series of creative F-bombs earned this episode a “mature” rating on Vimeo — Truby and Baca are longtime coffee professionals known to take their roasting and brewing craft quite seriously, often delving into coffee theory and business operations on the Cat & Cloud podcast and blog. C&C is also the featured roaster this month at the La Marzocco Cafe and Showroom in Seattle.
