Italian espresso machine company Nuova Simonelli has launched a notable addition to its popular Aurelia line called the Aurelia Wave UX, designed to handle a broad range of drink requirements in high-volume coffee shops.
The Wave UX is the first espresso machine to include the company’s Independent Temperature Setting (ITS) system, composed of a heat exchanger with thermostatic mixers installed between the machine’s large single boiler and each individual group. The technology is designed to customize then stabilize water temperature for each individual group.
“The ITS independently controls the temperature of each group, with the possibility to create a great number of different beverages — coffee and milk based drinks, tea, etc,” Lauro Fioretti, product manager for Simonelli Group, told Daily Coffee News. “For that reason the machine also addresses the needs of non-coffee oriented shops, too.”
The internal mechanical system for temperature stabilization and adjustment is monitored and controlled by PID-connected temperature probes in each group.

Said Fioretti, “This ‘less is more’ approach helps us to meet the new needs and standards of mainstream coffee chains and shops in terms of consistency, productivity and ease of use of the machine.”
According to the company the Aurelia Wave UX also consumes less power than previous Aurelia models.
Additional features on the Wave UX include Nuova Simonelli’s Easycream technology, which offers up to four different settings for the temperature and texture of milk to be frothed automatically, as well as mechanical and design elements aimed at enhancing usability, maintenance, and the barista’s ergonomic comfort.
“We’ve worked with the European Institute of Psychology and Ergonomics since 2004, when the institute certified the first Aurelia as ergonomic for baristas,” said Fioretti. “The UX version adapts the same ergonomic principles [and] has further optimized the user experience.”
The Aurelia Wave UX is slated to become available to customers in the United States in January 2022.
