A multiroaster program is now a multi-location phenomenon on both sides of the Willamette River in Portland, Oregon, where Hypnos Coffee opened its second design-forward shop last month.
The new cafe in Portland’s Nob Hill neighborhood, northwest of downtown, is larger than the original east-side location. While both feel open, refined and welcoming, the new shop takes a different tack with a darker, more classic design.
Along the commercial corridor of Northwest 21st Avenue, a smooth stainless steel bar sets the tone in the new 1,100-square-foot shop. Cylindrical pendant lights hang from the high ceiling, where skylights bring in additional daylight. Natural wood tabletops and shelving warm the reflective steel surfaces, while exposed rafters contribute to the industrial character.
“Our other store is very bright and airy, and for Nob Hill, we really leaned into moody and cozy, and wanted to envision how Hypnos has grown with us over these three years,” Hypnos Coffee Co-Owner Michael Taylor told Daily Coffee News. “Our goal was to do something really different than our first store, and make people feel like they’ve stepped into somewhere else entirely.”
The 700-square-foot first shop opened in late 2023 on North Williams Avenue, featuring a natural-wood-fronted bar with a white stone surface. Arches incorporated into the bar front, globe pendant lights and tall black metal chairs contribute to its European-inspired look.
While distinct in appearance, the west-side shop carries forward some of the European influence with a similarly rounded, L-shaped bar and shared menu items including einspanners and noisettes.
Coffees come from roasters including Coava Coffee, La Cabra and others. Specialty drinks made with house-made syrups and sauces developed by co-owner Andres Echeverria include an Ecuadorian chocolate mocha, a salted pistachio latte and the chestnut-flavored Marron Latte.
“Andy’s mom taught him how to cook at a very young age and since then he’s taken a lot of joy developing recipes,” Taylor said.
The Hispanic- and queer-owned company was co-founded in Portland in 2023 by Taylor, who grew up in St. Petersburg, Florida, and Echeverria, who was born and raised in Ecuador. The pair met while working coffee jobs in Miami — Taylor as a store manager for a national chain and Echeverria as a barista at an independent shop — before moving together to Portland to launch Hypnos.
Today, baristas at both Hypnos cafes pull shots on 2-group Slayer Steam LP espresso machines paired with Mahlkönig E65T and E65W grinders and integrated Puqpress auto-tampers. Mahlkönig EK43 grinders handle coffee for batch brews and pourover service.
The co-founders work together on selecting coffees that feel special and reflect their own tastes and backgrounds, while working with partner roasters on securing coffees exclusive to Hypnos.
“Right now, we have a single-origin Ecuador on espresso from Coava, grown and processed only a few hours from Andy’s hometown,” Taylor said. “For what’s next, we have some special exclusive lots from Coava coming soon for espresso, and for pourover, we’re thinking of a few roasters we tried on our most recent trip to Japan.”
With two shops now open on opposite sides of the Willamette River, Taylor said the focus will remain on exploring new coffees, roasters and flavors as the seasons change.
“We’re constantly thinking of new ideas, new concepts, new places,” Taylor said. “We can’t wait to watch Hypnos evolve alongside us.”
Hypnos Coffee is located at 807 NW 21st Ave. in Portland, Oregon.
